The controlled designation of origin "Lambrusco Grasparossa di Castelvetro" was born in 1970 and includes 13 municipalities in the province of Modena. Its origins are so ancient that "Lambrusca vitis" has been mentioned by Virgil and Cato. Grapes are harvested at the end of October, then they are destemmed and pressed. First fermentation occurs at controlled temperature and is important for extraction of colors and main aroma; the second fermentation in steel tanks happens according to the charmat method.
